From the Kitchen: Tomatillo Beef Stir Fry

We’re doing a recipe collaboration with family-owned 804 Cattle Company. Based in Prince George’s County, Maryland, they’re just a stone throw’s away from our backyard. You can check out the first recipe in the collaboration here. For the second recipe, we’re doing a Tomatillo Beef Stir Fry. It’s a great way to use this unique vegetable while still in season. Resembling a green tomato when peeled, but with a look and texture similar to a ground cherry, tomatillos make a great addition to a stir fry. When combined with stir fry beef, you get a tender and juicy dish that you just want to keep eating by the mouthfuls. Give it a try for yourself!

Recipe

Ingredients

  • ½ teaspoon of black pepper

  • ½ teaspoon of dried thyme

  • 1 teaspoon of clove powder

  • 1 tablespoon of oil

  • 3 sprigs of parsley, chopped

  • 3 tablespoons of Spicy Herb Blend

  • ½ onion, julienned

  • ½ bell peppers, julienned

  • 5 - 6 medium to large tomatillos, sliced

  • 1 pound stir-fry beef

  • Salt to taste

Steps

  1. In a medium bowl, and beef, dried spices, and the Spicy Herb Blend. Mix together and set aside and let the beef marinate for 30 mins.

  2. Add oil to a large pan on medium heat.

  3. Once oil is heated, add in the chopped herbs, onions, and bell peppers and sauté until golden brown.

  4. Add tomatillos, salt, and black pepper to the pot and sauté until golden brown/tomatillos soften. If the pan begins to dry out, add a little bit of water as needed.

  5. Once the tomatoes start to soften, add in the beef and stir until the meat is thoroughly cooked.

  6. Remove pan from heat and serve with your favorite sides.
