From the Kitchen: Sautéed Spinach with Bell Peppers

Spinach is one of our favorite go-to greens! If we’re not eating it in a salad, we’ll often sauté it to mix things up. We were happy to share more about it with FOX 5 DC as part of our Mother’s Day menu.

We served up plates of sautéed spinach, yellow rice, and baked salmon on FOX 5 DC in advance of Mother’s Day.

Recipe (Serves 5 - 6 people )

Ingredients

  • 36 oz of fresh spinach leaves

  • 1/2 red bell pepper (diced)

  • 1/2 yellow bell pepper (diced)

  • 1/2 small onion (diced)

  • 2 cloves garlic (minced)

  • 4 sprigs of parsley (chopped)

  • 2 springs of spring onion (chopped)

  • 2 tablespoons of vegetable oil

  • 4 teaspoons of Trini ‘Hot’ Pepper Sauce

  • 1 teaspoon of black pepper

  • Salt to taste

Steps

  1. Add vegetable oil to a medium pot and heat for two minutes.

  2. Add garlic, onion, spring onion and parsley to the pan. Let sit for 2 - 3 minutes, with occasional stirring.

  3. Add bell peppers, black pepper and salt. Sauté for and additional 2 - 3 minutes.

  4. Add spinach to the pot. We recommend adding in small batches at a time until the spinach shrinks down a bit.

  5. After adding in the final batch of spinach, cover with a lid and let it cook down.

  6. The spinach will spring its own water, so stir around occasionally until your spinach reaches your desired level of tenderness.

  7. Remove from heat and set aside to cool down.

  8. Serve with your favorite dishes and enjoy!
