From the Kitchen: Spicy Black Bean Chili

When it’s cold outside, we love hearty, tasty meals. Chili is a simple and effective dish that warms us up. Black bean chili in particular, is one of our favorite vegetarian dishes - it’s spiced just right, and is very filling. Being from Trinidad, we of course love all things hot. While at home, we tried a spicy take on the dish. Making chili is a great way to use those cans that you’ve stocked up on in your pantry.

Recipe (Serves 3 people )

Ingredients

  • 1/2 teaspoon ground clove

  • 1/2 teaspoon paprika

  • 1 teaspoon chili powder

  • 1 teaspoon oregano

  • 1 sprig of thyme

  • 1 jalapeño pepper, chopped

  • 1 teaspoon cinnamon powder

  • 2 tablespoons of olive or avocado oil

  • 3 tablespoons Island Herb Blend

  • 3 tablespoons Trini ‘hot’ pepper sauce

  • 1/2 cup tomatoes, chopped

  • 1 small onion, chopped

  • 3 cloves of garlic, chopped

  • 2 cans black beans, drained

  • 3 cups of water

  • Italian parsley, chopped

  • Salt and pepper to taste

Steps

  1. Make a spice blend by mixing ground clove, paprika, chili powder, oregano, salt and black pepper in a small bowl. Set aside

  2. Add oil to a pot on medium heat

  3. Once oil is hot, add garlic, onion, parsley, thyme, and jalapeño to the pot

  4. Add black beans to the pot

  5. Add tomatoes in as well

  6. Mix island herb blend and custom spice blend into the bean and tomato mixture

  7. Add 3 cups of water to the pot, and cover

  8. Let beans simmer for approximately 15 minutes

  9. Add in cinnamon powder to the mixture

  10. Add Trini ‘hot’ pepper sauce. We recommend 3 tablespoons, but add in more or less depending on your spice tolerance

  11. Add water as needed and let simmer for 5 more minutes

  12. Remove chili from heat and cool. Enjoy!

Take it up a notch

  • Top with cheese

  • Serve with cornbread

  • Serve with tortilla chips

  • Eat as a side dish
