Taking it back to our roots

Growing up in Trinidad and Tobago, we’ve had our share of curry dishes. From curry chicken to curry pumpkin, we’ve had the pleasure of trying curry in a variety of ways. So, while on a recent trip to Trinidad, we decided to bring back a taste of home with us – in the form of madras curry. For you, the mention of curry probably brings to mind the curries of East India, Thailand, or Japan.

In the Caribbean, when we refer to curry, it is of the East Indian kind. As there is a large East Indian influence in Trinidad, we traditionally use curry when cooking dishes from the South Asian region. The madras curry powder that we use is a blend of many flavors including turmeric, curry leaves, and other spices. It is a versatile flavor and complements many dishes such as meats, seafoods, and vegetables. The curry spice really spruces up dishes and blends well with other spices. It even adds an intense flavor to stews, marinades, and sauces, giving them a much-needed flair.

The power of turmeric

So how does this golden goodness get its color? The primary spice used in this curry is turmeric which has a vibrant yellow hue. Turmeric has been used in India for thousands of years as a spice and as a medicinal herb. In fact, you can call it an ancient spice!

Studies have shown that turmeric contains curcumin, a substance with powerful anti-inflammatory properties. When used in combination with other spices (e.g. black pepper), it helps to increase the level of antioxidants in the body. The benefits of curry also include boosting digestive health and increasing cognitive function, among other things. Curry makes a healthy addition to any diet.
