From the Kitchen: Yellow Curry Rice

In case you haven’t gotten the memo, we’re fans of curry! It’s a very fragrant spice that adds an intense punch to dishes. While you might not automatically think of adding curry to rice, we’re here to show you that it can be done. Not only does curry add that extra oomph of flavor to plain rice, but it transforms its color as well. So give it a try, and see how you can jazz up your pot of rice!

Recipe (Serves 5-6 people )

Ingredients

  • 1 cup of rice

  • 2 tablespoons of olive or avocado oil

  • 2 blades of spring onion, chopped

  • 2 sprigs of Italian parsley, chopped

  • 3 cloves of garlic, minced

  • 3.5 tablespoons of Madras Curry

  • 1/2 cup of red bell peppers, chopped

  • 3.5 cups of water

  • Salt to taste

Steps

  1. In a small bowl, add madras curry to 3 tablespoons of water. Stir until you get a well mixed paste

  2. In a separate pot, bring 3.5 cups of water to a boil

  3. Add rice to the pot and boil for 20 minutes

  4. Drain rice in a colander once it is finished, and set aside

  5. Add oil to a new pot, and heat until it is hot

  6. Add curry paste and garlic to the pot, and stir

  7. Follow with spring onions, parsley, and bell peppers, and salt. Stir well

  8. Add rice to the curry mixture, and stir until the curry and herbs have blended in well with the rice

  9. Your rice should have nice yellow color

  10. Remove from heat and enjoy!
