From the Kitchen: Pico De Gallo

It being summertime, we’ve gotten a ton of tomatoes through our CSA share. We love participating in CSAs because as the name implies, it’s community supported agriculture. There’s nothing better than eating local. To us, it’s some of the freshest produce that you can get.

So when you do have a bunch of tomatoes, we recommend pico de gallo as a good alternative to a summer salad. Ours is chock full of other great summertime favorites such as bell peppers. Don’t worry, we’re keeping this recipe spicy. After all, we’re Trini. See below for the recipe, and while you’re at it, check out the fun video we made to accompany it.

Recipe (Serves 3 - 4 people )

Ingredients

  • 3 medium tomatoes, chopped

  • 1 small bell pepper, diced

  • 1/2 small onion, diced

  • 1 sprig of spring onion, diced

  • 1 tablespoon of lemon juice

  • 2 tablespoons of Trini ‘Hot’ Pepper Sauce

  • Salt and black pepper to taste

Steps

  1. Add tomatoes to a large bowl.

  2. Combine with bell peppers, onion, and spring onion.

  3. Mix in lemon juice.

  4. Finish off by adding in salt, black pepper, and pepper sauce. Make sure everything is well mixed.

  5. Put in the refrigerator to chill for at least an hour.

  6. Enjoy!
