From the Kitchen: Peppery Pumpkin Pie

When we think of fall, we can’t help but think of desserts. The season is the harbinger for all the upcoming holidays - with Thanksgiving being top of mind. We decided to start of the autumn season with a take on the classic pumpkin pie. We love all things spicy, but as we love our sweets as well, we figured we’d combine our love of the two. The result is a pumpkin pie heavily spiced with quintessential Caribbean flavors. If you’re in the mood for a sweet and spicy bite to munch on, then you’ll certainly want to try this!

Peppery Pumpkin Pie made with our Pumpkin Spice Pepper Sauce.

Recipe (Serves 8 people )

Ingredients

Dough

  • ¼ teaspoon of salt

  • 1 teaspoon of ground clove

  • 1 teaspoon of nutmeg

  • 2 teaspoons of cinnamon powder

  • 2 tablespoons of sugar

  • 4 tablespoons of shortening

  • 1 quart of butter (slightly thawed, but still sort of hard)

  • 1 cup of cold water

  • 2 cups of flour

Pumpkin Filling

  • 1 teaspoon of clove powder

  • 1 teaspoon of ground ginger

  • 1 teaspoon of nutmeg

  • 1 teaspoon of pumpkin pie spice

  • 2 teaspoons of cinnamon powder

  • 3 tablespoons of Pumpkin Spice Pepper Sauce (use more or less depending on your spice tolerance)

  • 1 can of condensed milk

  • 2 eggs

  • 2 ounces of sugar

  • 2 cups of pumpkin, cubed

  • Essence to taste

Steps

Dough

  1. Add all dry ingredients into a mixing bowl and whisk together.

  2. Cut in butter into the flour, and follow with the shortening.

  3. Mix together by hand until the consistency resembles bread crumbs .

  4. Make a well in the center of the mixture and add water to make a firm dough.
    Note: the dough should not be too soft or too hard. Add in enough water and mix with a lifting motion.

  5. For dough into a round ball and leave in the refrigerator for 20 minutes.

Pumpkin Filling

  1. Add the cubed pumpkin to steamer (or add into a pot with two cups of water).

  2. Boil water for 15 to 20 minutes.

  3. Once pumpkin is done boiling, drain excess water and leave to cool.

  4. Add cooled pumpkin to a blender along with all the other ingredients except for the eggs.

  5. Blend together well.

  6. Lastly, add in eggs to the mixture, and blend until well mixed.

Bringing It Together

  • Roll out flour into a round shape and stretch into a pie dish. Make sure the bottom and the sides are well covered, and cut away any excess dough. Make sure the dough is firmly pressed into the pie dish.

  • Pour pumpkin mixture over the dough.

  • Bake the pie for 1 hour and 10 minutes at 350 degrees F.

  • Remove pie from oven, and cool before slicing.

  • Enjoy!
