From the Kitchen: Corn and Black Bean Salsa

Can you believe it’s almost summertime already? In case you haven’t gotten the memo, we love bold and colorful dishes - especially when it’s hot outside! Since we like a good salsa every now and then, we decided to try a recipe that’s perfect for summertime gatherings - even if it’s just a party of one. A corn and bean salsa is a great way to combine spicy and tart flavors. The corn also adds a slight bit of sweetness that has you dreaming of a summertime melody. It’s a fresh alternative to that summertime salad, and has the advantage of being vegetarian/vegan.

Recipe (Serves 6 people )

Ingredients

  • 1/2 cup of whole kernel corn

  • 1/2 cup of tomatoes, chopped

  • 1/2 jalapeño, diced

  • 1 small lime, juiced

  • 1 can of black beans, drained

  • 2 blades of spring onion, chopped

  • 2 sprigs of Italian parsley, chopped

  • 2 cloves of garlic, minced

  • 3 tablespoons Trini ‘hot’ pepper sauce

  • Salt to taste

Steps

  1. Add black beans, corn, and tomatoes to a large bowl.

  2. Add in garlic, parsley, spring onion and jalapeño.

  3. To the bowl, add in lime juice and salt and mix together.

  4. Next, add pepper sauce to the mixture, and stir until well mixed.

  5. (Optional) Place in the refrigerator if you would like your salsa to be chilled.

  6. Enjoy!
