From the Kitchen: Brown Stewed Zucchini

It’s fall, but we can’t help but squeeze in one last recipe that reminds us of summer. Don’t worry, this recipe is perfect for all year round! One of the vegetables we’ve been obsessed with this past season has been zucchini. We got some as part of the CSA program we participate in. They were so bountiful, that we just had to come up with many different ways to use them! One thing that we love to do is a good stew - be it chicken, beef, or potatoes. We decided to try our hand with zucchini and the results were delicious. We spiced it up with our pepper sauce for a delicious added flavor and kick! Best of all, this dish is healthy, nutritious, and vegan. Be sure to give it a try!

Recipe (seves 4 - 5 people)

Ingredients

  • ½ red onion, diced

  • 1 sprig of oregano, chopped

  • 1 sprig of chives, chopped

  • 2 sprigs of green onion, chopped

  • 1 tablespoon of browning*

  • 1 tablespoon of oil

  • 2 tablespoons of Pumpkin Spice Pepper Sauce

  • 3 cloves of garlic, diced

  • 1 bell pepper, diced

  • 2 pounds of zucchini, cubed

  • Salt to taste

Steps

  1. Add oil to a large pot on medium heat.

  2. Once the oil is heated, add in garlic, onion, and herbs. Sauté for 2 minutes or until golden brown.

  3. Add zucchini, bell peppers, browning, and salt to the mix, and stir for 2 minutes.

  4. Cover the pot and lower the heat.

  5. After 5 minutes, uncover the pot and turn the contents so the zucchini is coated evenly.

  6. Add pepper sauce to the mix.

  7. Cover contents for another 5 minutes, and then turn.

  8. Repeat step five until the zucchini is tender and brown. This should take about 20 - 25 minutes in total. Do not add in any additional water.

  9. Once the zucchini is tender, turn off the heat and enjoy!
